Protein Pancake Stack

Ingredients (makes 6)

  • 100g organic self-raising flour
  • 180ml organic milk
  • 1⁄2 organic, free-range egg
  • 1⁄2 scoop WHEY AHEAD Naked
  • 1 tsp. baking powder
  • Splash organic sunflower oil for cooking
  • Organic blueberries/strawberries/honey for garnish

Directions

  • Sieve the flour and mix with the protein powder and baking powder in a large bowl
  • Beat the egg and milk together and then add to the dry mixture, whisking into a thick smooth batter
  • Add the sunflower oil (or knob of organic butter) to a non-stick pan and add the mixture to the pan
  • Cook for about 3 minutes until small bubbles appear on the pancake before flipping onto the other side and cooking for further couple of minutes until golden
  • Serve in a stack with the blueberries/strawberries and honey
