Dark Chocolate Brownies

Ingredients (makes 6)

  • 42.5g organic dark chocolate (70%) (we used Green & Black’s)
  • 27.5g organic plain flour
  • 50g organic margarine (we used biona sunflower vegetable margarine)
  • 50g organic golden caster sugar
  • 25g organic muscovado sugar
  • 1⁄2 scoop (15g) WHEY AHEAD Madagascan Vanilla
  • 12.5g organic cocoa powder
  • 1 organic, free-range egg
  • 14 organic walnut halves
  • 1⁄4 tsp. bicarbonate of soda


  • Heat oven to 180c/fan 160c/gas 4
  • Melt the chocolate in a bowl over boiling water without letting the bowl touch the water
  • Lightly oil and line (with grease-proof paper), a square cake tin at least 5cm deep
  • Sieve the flour in a bowl with the cocoa and bicarbonate of soda
  • Stir both sugars, protein and walnuts (chopped) into the melted chocolate, adding 1 tbsp. warm water to help dissolve
  • Beat the egg and margarine together until smooth
  • Add the flour mixture into the egg mixture and mix until smooth without over-doing it
  • Pour the brownie mixture into the pre-prepared tin and spread into the corners
  • Bake for 30 minutes. You can check they are done by inserting a knife into
    the middle and removing it (it should be clean)
  • Leave the tin to cool before turning the brownies out and serve!
